I gave up pasta 15 years ago. The Reason? Why put empty… fattening calories in my body? But to be 100% honest with you… there are days when this comfort food would taste so good!! So my go to alternative? Yellow Squash Pasta….. so easy to make…. so delicious…. and so healthy! When baked…. the inside flesh pulls out in long strands resembling pasta. Making squash pasta could not be easier make…. or healthier to eat!

Minerals
A 1-cup serving of spaghetti squash also contains several minerals that are vital to good health. The dominant mineral is manganese, with 0.2 mg, which is 8 percent of the RDI. Manganese is needed only in small amounts, but it has a big job. The University of Maryland Medical Center reports manganese aids in the production of healthy bones, tissues and sex hormones. It also plays a part in metabolism, regulation of blood sugar, absorption of calcium and the functioning of the nervous system. Other minerals found in smaller amounts in spaghetti squash include potassium, magnesium, calcium, copper, iron, phosphorus, sodium, zinc and selenium.
Now that we know just how healthy this squash is…. Let’s get started!!
So Healthy…. So Good!! YUM!!
Love your outfit!!! Gorgeous orange framing your face, and the sweater is beautiful !!
As for the squash : sounds delecious and easy enough to tackle for someone like me who dislikes cooking. And I too agree with you, as much as I love pasta I avoid it like the plague. It now leaves me in a catatonic state, only wanting a siesta!! Ugh
Tis the season for Yellow squash !!
Your look gorgeous and make squash look delicious! Happy Fall!
My friend turned me onto this a few years ago. I was shocked how good it tasted. I add either olive oil or some spaghetti sauce and it is SO GOOD!
We are trying to be healthier and drop a few lbs in my household so looks like this may go into the recipe box! Sounds delish!
What a great way to get in some more veggies! My kids hate veggies, but if I can disguise it as spaghetti?!? Genius!
I just cannot get enough of spaghetti squash. SO healthy and SO easy.
I love the fall season! Time for the squashes and pumpkins and home cooked meals! Thank you for the easy tips on how to make this dish. I have always wanted to try it and it sounds easy to make and so healthy compared to the empty calories and starches in pasta.
As a single woman, I find that I don’t cook as much and certainly don’t eat many veggies as they end up going bad in the fridge so this is the perfect fix! I can make it when I am ready as these type of veggies don’t spoil as fast and I can have a friend over to share it with. We get our veggies, our vitamins and none goes to waste! SCORE!
M’mm! That sounds really good. I love squash. Good time of year of this!
I am not much of a vegetable eater, let alone squash. But this looks pretty good. I am willing to try it.
Oh yes! I make spaghetti squash from time to time. My family loves it.
I’m so trying this!!!i think my daughter will love it!!!!!
I LOVE pasta! Yes, I am one of those people. If I can have a healthier way of eating something that tastes like pasta, I’m in!
Oooh, this looks and sounds divine. Squash is a favorite of mine and now I know how to get the kids to eat it too!
Not sure about this. Not a squash fan at all. If it tastes anything like squash, I probably won’t like it.
I have actually made this and it is really good! I just cook it in the microwave (probably not the best way, but definitely the easiest).
I need to try this! I am assuming they sell spaghetti squash in the vegetable dept of the grocery store?
You look Beautiful as always. This sounds so easy!! Even a non-cook like myself can do this! Thanks for sharing!
YUMMY!! That sounds really delicious! I can’t wait to try it.
OMG I love squash!! this made my mouth water…. I will need to try this soon. Thanks for the idea.
I wonder how it would taste with marinate sauce…. maybe I can convince my family to try it.
I also like cauliflower mashed “potatoes”…So good! I’m a vegetarian and I always try and turn my friends on to different ways to eat vegetables. Great post!
Guess what’s for dinner tonight! What would be a good side dish to serve with this? Bread?
Sound wonderful and perfect meal to make as a side dish for thanksgiving. I will need to add that to my table this year. 🙂
Interesting! I’ve never heard this before. There might be some hope to get my family to eat SOME kind of veggie!! Thanks, Laura!
Woah that is crazy, I would have never thought of making squash pasta and that it could be that easy. I guess i will need to experiment with it.
