My favorite thing to make this time of year is…. caramel apples. But to boil carmel and ruin a pan…. not my bag. In comes…. Caramel Wraps by Concord Foods, and life just got a whole lot easier! When we went to shoot this story….. every store we went to… was completely sold out of The Carmel Wraps…. so we bought the “Candied Apples” kit by the same company. It was by no means as easy to make as the caramel apples….. as there was boiling involved… but still a good time was had by the team.

Fall Feast

I gave up pasta 15 years ago. The Reason? Why put empty… fattening calories in my body? But to be 100% honest with you… there are days when this comfort food would taste so good!!  So my go to alternative? Yellow Squash Pasta….. so easy to make…. so delicious…. and so healthy! When baked…. the inside flesh pulls out in long strands resembling pasta. Making squash pasta could not be easier make…. or healthier to eat!

Vitamin Rich
Yellow squash is a brilliant source of vitamin C and a very good source of magnesium, vitamin A (particularly in its concentration of carotenoids, including beta-carotene), fiber, folate, copper, riboflavin and phosphorus. It is also abundant in potassium, providing 345.60 milligrams per serving.In addition, it is high in manganese, a mineral which helps the body process fats, carbohydrates, and glucose.
Minerals
A 1-cup serving of spaghetti squash also contains several minerals that are vital to good health. The dominant mineral is manganese, with 0.2 mg, which is 8 percent of the RDI. Manganese is needed only in small amounts, but it has a big job. The University of Maryland Medical Center reports manganese aids in the production of healthy bones, tissues and sex hormones. It also plays a part in metabolism, regulation of blood sugar, absorption of calcium and the functioning of the nervous system. Other minerals found in smaller amounts in spaghetti squash include potassium, magnesium, calcium, copper, iron, phosphorus, sodium, zinc and selenium.

PIZZA DOUGH or Bread?

So a couple of weeks ago I bought a benign looking ball of what I thought was bread dough at Whole Foods. It happened to be one of our shoot days…. so when Team Fabulous365 was gathered in the kitchen….. I pulled out the dough and everyone asked what it was…. to which I replied…. “I think it’s bread dough…. shall we bake it up?” 30 minutes later out of the oven pops what was the best loaf of bead any of us had EVER tasted! EVER! We devoured that bread like animals!!

A couple of days ago I was buying a few more loaves for the team….. and upon checking out…. a man said to me that I must like pizza dough…. okay it was more than a few hahahaha. I proceeded to tell him it was bread and that he had to try it. When it was my turn to check out, the checker told me it was actually pizza dough! Duhhhh on me! So when Team Fabulous365 gathered again…. we tried it out both ways and realized that pizza dough as a loaf of bread is pretty freaking amazing!! So….. You wanna taste some of the best bread ever? Just bake up some pizza dough into a loaf of bread…. and eat what is the best bread we have ever tasted!!

Directions
Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.

Juts pop that dough into a greased pan and bake for 30 minutes….. let cool for 10 minutes….. smother with butter and jam….. and just go to heaven when that bread melts in your mouth!!

Paleo….

It’s become the big Buzz word in the diet world. Paleo, CaveMan, Protein Diet…. they all center around one concept…. God’s Foods. Clean… healthy… non-processed foods. The way I see it…. if God made it…. We can eat it. Easy… Simple… and the healthiest way a human being can eat. So what are God’s foods you ask? Well anything that makes it to your table without being processed. Meat, Chicken, Fish, Eggs, Fruits, Vegetables, Seeds, Nuts and Grains.

So effective is this diet that I lost 8 solid pounds in two weeks when I cut out all processed foods…. Including chocolate. Was it easy? Yes…. once I got into the “Non Process” mindset. With the Paleo buzz there are now processed Paleo foods that I personally recommend staying away from. The idea here is to only put whole foods into our systems and take a rest from the chemicals and packaging of the processing. If you feel like you can’t do it…. when purchasing processed….. look for only one or two ingredients. If the list is longer than 4…. stay away.

So that’s my take on the God’s Food/Paleo Diet. I wanted to get another perspective… So we visited the Paleo Leap and brought over their 15 Paleo Rules for your viewing pleasure…..

15 Paleo Diet Guidelines

  • A Paleo diet should be high in fat, moderate in animal protein and low to moderate in carbohydrates. Calorie counting is not encouraged, neither is portion control.
  • Eat generous amounts of saturated fats like coconut oil and butter or clarified butter. Beef tallow, lard and duck fat are also good, but only if they come from healthy and well-treated animals. Beef or lamb tallow is a better choice than lamb or duck fat. Olive, avocado and macadamia oil are also good fats to use in salads and to drizzle over food, but not for cooking.
  • Eat good amounts of animal protein. This includes red meat, poultry, pork, eggs, organs (liver, kidney, heart…), wild caught fish and shellfish. Don’t be scared to eat the fatty cuts and all meals with proteins should contain fat as well. Learn to cook with bones in the form of stocks and broths.
  • Eat generous amounts of fresh or frozen vegetables either cooked or raw and served with fat. Starchy vegetables like sweet potatoes and yams are also great as a source of non-toxic carbohydrates.
  • Eat low to moderate amounts of fruits and nuts. Try to eat mostly fruits low in sugar and high in antioxidants like berries as well as nuts high in omega-3, low in omega-6 and low in total polyunsaturated fat like macadamia nuts. Consider cutting off fruits and nuts altogether if you have an autoimmune disease, digestive problems or are trying to lose weight faster.
  • Preferably choose pasture-raised and grass-fed meat coming from local, environmentally conscious farms. If not possible, choose lean cuts of meat and supplement your fat with coconut oil, butter or clarified butter. Also preferably choose organic, local and/or seasonal fruits and vegetables.
  • Cut out all cereal grains and legumes from your diet. This includes, but is not limited to, wheat, rye, barley, oats, corn, brown rice, soy, peanuts, kidney beans, pinto beans, navy beans and black-eyed peas.
  • Cut out all vegetable, hydrogenated and partly hydrogenated oils including, but not limited to, margarine, soybean oil, corn oil, peanut oil, canola oil, safflower oil and sunflower oil. Olive oil and avocado oil are fine, but don’t cook with them, use them in salad dressings and to drizzle over food.
  • Eliminate added sugar, soft drinks, all packaged sweets and juices (including fruit juices). As a rule of thumb, if it’s in a box, don’t eat it. At the grocery store, visit primarily the meat, fish and produce sections.
  • Eliminate dairy products other than butter and maybe heavy cream. You don’t need dairy, but if you can’t live without, consider raw, full-fat and/or fermented dairy.
  • Eat when you’re hungry and don’t stress if you skip a meal or even two. You don’t have to eat three square meals a day, do what feels most natural.
  • Eliminate external stressors in your life as much as possible and sleep at least 8 hours per night. Try to wakeup without an alarm and to go to bed when it gets dark.
  • Don’t over-exercise, keep your training sessions short and intense and do them only a few times per week. Take some extra time off if you feel tired. Consider short and intense sprinting sessions instead of very long cardio sessions.
  • Consider supplementing with vitamin D and probiotics. Levels of magnesium, iodine and vitamin K2 should also be optimized. Iodine can be obtained from seaweeds. You probably don’t need a multivitamin or other supplements.
  • Play in the sun, have fun, laugh, smile, relax, discover, travel, learn and enjoy life like a daring adventure!

Pass the Pot Please!!!

There is a new POT in town…. and every single person reading this article should throw their Teflon pots and pans away and run (don’t walk) to your nearest store that carries Ceramic Cookware. Teflon heated at high temperatures releases toxic fumes… that are toxic enough to kill a pet bird…. and can cause people to develop flu-like symptoms called “Teflon Flu.” I could go into all sorts of details….. but let’s keep it short and sweet and get you to the store quicker!

My favorite brands? I have two…. Calphalon and Bialetti. Both available at department stores or Bed, Bath and Beyond. Ceramic Cookware is so easy to use and clean…. it tops my list. The beauty of Ceramic is that even Ralphs is carrying it. I beg of you to cast away… any and all Teflon and start healthy cooking with ceramic.

Happy Jewish New Year!

To all of our Jewish Friends…. Happy New Year! Today is the second day of Rosh Hashana the Jewish New Year…. and in celebration of this holy day…. we wanted to bring to your attention several ways to enjoy Matzo. Matzo is an unleavened bread traditionally eaten during the week long Passover Holiday…. but today we have found some really yummy ways to incorporate it into everyday life. Why you ask? Because this flat little bread is SO low in CALORIES & FAT that it should be a staple in every home!!

First up….

This recipe could not be easier or tastier! We are taking a piece of Matzo and spreading the almond butter until one side is completely covered. Then take the almond buttered side…. and fill it with strawberries. Cover with a plain matzo to make a sandwich… or leave it off to keep open faced. So easy… really beautiful…. and really yummy!!

Another simple, easy and yummy recipe. All we need is… 2 pieces of matzo, marshmallows and a bar or two of chocolate. Place one chocolate topped matzo in the broiler cover in marshmallows and let broil for 4 minutes. VIOLA! A sweet, savory and yummy treat!!

The “Dirty Dozen” is back…..YAY!! So up today? The Blueberry. Of 60 fruits and vegetables analyzed in a Tufts University study…. the almighty blueberry had the highest antioxidant content of all…. Meaning…. the blueberry has the ability to reduce free radical damage in our bodies’ cells, which means it is one of the healthiest food choices to put in our bodies. Now here’s the serious issue…. This Fruit Perpetrator usually tops the Dirty Dozen list with more than 50 pesticide residues! 50! Yuck!
For those of you that are new to The Dirty Dozen…. I will give you a little recap. “The Dirty Dozen” is a list of fruits and vegetables that have been found to have the highest residual pesticides by several watch groups with The Environmental Working Group leading the pack. So far we have highlighted 5 of “The Dirty Dozen.” Strawberries, grapes, apples and hot peppers…. and including today…. the powerful blueberry.

On the blueberry it’s… Go Organic…. or Go Home! I wouldn’t even consider putting one of these babies in my mouth unless I knew 100%…. it was organic. It’s that bad. Cultivated blueberries are heavily sprayed and seriously contaminated. Wild grown, organic are smaller but way tastier! So My Beautiful Peeps…. Let’s make a pact to only buy organic when purchasing this powerhouse of a fruit!
